Vegan\u00ebt nuk han\u00eb mjalt\u00eb sepse ai \u00ebsht\u00eb nj\u00eb ushqim me origjin\u00eb shtazore, ashtu sikurse edhe  qum\u00ebshti dhe vez\u00ebt.<\/p>\n<p>Zgjedhja vegane e regjimit ushqimor \u00ebsht\u00eb e lidhur ngusht\u00eb me arsye etike q\u00eb ka t\u00eb b\u00ebj\u00eb me d\u00ebshir\u00ebn p\u00ebr t\u00eb shmangur jo vet\u00ebm vdekjen, por edhe shfryt\u00ebzimin e kafsh\u00ebve n\u00eb \u00e7do kontekst. Sipas k\u00ebtij rasti, vegan\u00ebt nuk mund t\u00eb han\u00eb mjalt\u00eb sepse ai \u00ebsht\u00eb produkt i shfryt\u00ebzimit t\u00eb blet\u00ebve si nj\u00eb ushqim rezerv\u00eb p\u00ebr muajt e dimrit. N\u00eb fakt, blet\u00ebt ushqehen me nektarin e luleve, por  kur ai mungon, at\u00ebhere ato p\u00ebrdorin mjaltin q\u00eb kan\u00eb prodhuar.<\/p>\n<p>\u00c7far\u00eb \u00ebsht\u00eb mjalti dhe si e prodhojn\u00eb blet\u00ebt?<\/p>\n<p>Mjalti \u00ebsht\u00eb nj\u00eb ushqim me shum\u00eb sheqer n\u00eb form\u00ebn e fruktoz\u00ebs, i prodhuar nga blet\u00ebt duke p\u00ebrdorur nektarin e marr\u00eb nga lulet n\u00eb muajt e ngroht\u00eb t\u00eb vitit. Pasi t\u00eb prodhohet, mjalti ruhet brenda kosheres dhe sh\u00ebrben  si furnizim ushqimor i blet\u00ebve  p\u00ebr periudh\u00ebn e  dimrit. <\/p>\n<p>Si ushqim, mjalti mund t\u00eb shihet si nj\u00eb burim i sheqernave t\u00eb thjeshta dhe p\u00ebr k\u00ebt\u00eb arsye ai \u00ebsht\u00eb nj\u00eb ushqim shum\u00eb energjik dhe \u00ebmb\u00eblsues.  N\u00eb ndryshim nga shum\u00eb produkte t\u00eb tjera ushqimore ai \u00ebsht\u00eb i vetmi produkt q\u00eb nuk k\u00ebrkon asnj\u00eb transformim p\u00ebr t\u2019u konsumuar nga ana e njeriut.<\/p>\n<p>N\u00eb p\u00ebrcaktimin ligjor me mjalt\u00eb duhet t\u00eb n\u00ebnkuptojm\u00eb produktin ushqimor q\u00eb blet\u00ebt sht\u00ebpiake e prodhojn\u00eb nga nektari i luleve ose nga sekrecionet q\u00eb vijn\u00eb nga pjes\u00ebt e gjalla t\u00eb bim\u00ebve ose q\u00eb gjenden n\u00eb to, t\u00eb cilat i mbledhin, i transformojn\u00eb, i bashkojn\u00eb me substancat e veta specifike dhe i ruajn\u00eb n\u00eb hojet e koshereve\u201d.<br \/>\nKonsumimi i tij nga njeriu ka rr\u00ebnj\u00eb shum\u00eb t\u00eb lashta, por ishin grek\u00ebt dhe romak\u00ebt q\u00eb e shenjt\u00ebruan at\u00eb si nj\u00eb p\u00ebrb\u00ebr\u00ebs &#8220;t\u00eb gjithansh\u00ebm&#8221; n\u00eb kuzhin\u00eb, jo vet\u00ebm si nj\u00eb \u00ebmb\u00eblsues, por edhe nj\u00eb ruajt\u00ebs i shk\u00eblqyer i ushqimit dhe nj\u00eb p\u00ebrb\u00ebr\u00ebs p\u00ebr p\u00ebrgatitjen e shum\u00eb \u00ebmb\u00eblsirave,  etj.<\/p>\n<p>Prodhimi i mjaltit \u00ebsht\u00eb rezultat i nj\u00eb pune t\u00eb gjat\u00eb dhe komplekse, e cila fillon kur blet\u00ebt nxjerrin nektar nga lulet. Nektari \u00ebsht\u00eb nj\u00eb l\u00ebng me sheqer, t\u00eb cilin blet\u00ebt kur e grumbullojn\u00eb e ruajn\u00eb n\u00eb nj\u00eb organ t\u00eb caktuar. K\u00ebtu, nektari &#8220;tretet&#8221; pjes\u00ebrisht nga enzimat, t\u00eb cilat transformojn\u00eb pH dhe p\u00ebrb\u00ebrjen kimike t\u00eb tij.<br \/>\nM\u00eb pas blet\u00ebt kthehen n\u00eb koshere, ku nektari rikthehet dhe g\u00eblltitet nga blet\u00ebt e tjera &#8220;sht\u00ebpiake&#8221;, t\u00eb cilat vazhdojn\u00eb procesin e tretjes derisa nektari, i cili ende nuk \u00ebsht\u00eb b\u00ebr\u00eb mjalt\u00eb, depozitohet n\u00eb nj\u00eb hoje mjalti. N\u00eb k\u00ebt\u00eb koh\u00eb, nektari \u00ebsht\u00eb ende shum\u00eb i l\u00ebngsh\u00ebm dhe viskoz, prandaj duhet t\u00eb q\u00ebndroj\u00eb n\u00eb qet\u00ebsi p\u00ebr t\u00eb marr\u00eb konsistenc\u00ebn e duhur. Fal\u00eb temperatur\u00ebs s\u00eb kosheres, por mbi t\u00eb gjitha fal\u00eb pun\u00ebs s\u00eb blet\u00ebve, t\u00eb cilat me krah\u00ebt e tyre kontribuojn\u00eb n\u00eb ruajtjen e ajrosjes s\u00eb duhur, b\u00ebhet procesi i avullimit t\u00eb nektarit. N\u00eb k\u00ebt\u00eb pik\u00eb, blet\u00ebt e mbyllin mjaltin n\u00eb hoje me nj\u00eb mbules\u00eb t\u00eb vog\u00ebl dylli, n\u00eb m\u00ebnyr\u00eb q\u00eb t\u00eb mos thith\u00eb lag\u00ebshti nga jasht\u00eb dhe  t\u00eb  mos ndotet n\u00eb asnj\u00eb m\u00ebnyr\u00eb.<\/p>\n<p>Produkt kafsh\u00ebsh apo perimesh \u00ebsht\u00eb mjalti?<\/p>\n<p>Mjalti ka nj\u00eb natyr\u00eb t\u00eb dyfisht\u00eb. Roli i blet\u00ebve \u00ebsht\u00eb thelb\u00ebsor n\u00eb p\u00ebrpunimin e produktit: vet\u00ebm ato mund t\u00eb kryejn\u00eb k\u00ebt\u00eb pun\u00eb t\u00eb pabesueshme t\u00eb mbledhjes s\u00eb pikave t\u00eb vogla p\u00ebr t\u00eb mbledhur sasi t\u00eb konsiderueshme nektari, p\u00ebr t&#8217;u transformuar m\u00eb pas me nj\u00eb proces po aq t\u00eb vog\u00ebl dhe t\u00eb duruesh\u00ebm. Megjithat\u00eb, l\u00ebnda e par\u00eb fillestare \u00ebsht\u00eb me origjin\u00eb bimore dhe mjalti i p\u00ebrfunduar i detyrohet karakteristikave t\u00eb materialit t\u00eb tij fillestar. Nektari \u00ebsht\u00eb nj\u00eb substanc\u00eb e sheqerosur q\u00eb bim\u00ebt e prodhojn\u00eb pik\u00ebrisht p\u00ebr t\u00eb t\u00ebrhequr insektet, t\u00eb cilat k\u00ebshtu b\u00ebhen vektor\u00eb t\u00eb pavet\u00ebdijsh\u00ebm t\u00eb polenit, elementit pjalmues, i cili  transportohet te lulet e tjera. Poleni grumbullohet edhe nga blet\u00ebt, por nuk p\u00ebrdoret p\u00ebr prodhimin e mjaltit, por si ushqim proteinik p\u00ebr format e mitura. N\u00eb mjalt\u00eb, poleni \u00ebsht\u00eb i pranish\u00ebm vet\u00ebm n\u00eb sasi shum\u00eb t\u00eb vogla si nj\u00eb p\u00ebrb\u00ebr\u00ebs i rast\u00ebsish\u00ebm.<\/p>\n<p>Nj\u00eb tjet\u00ebr l\u00ebnd\u00eb fillestare p\u00ebr formimin e mjaltit \u00ebsht\u00eb veza e mjaltit, n\u00eb k\u00ebt\u00eb rast, \u00ebsht\u00eb vet\u00eb l\u00ebngu i bim\u00ebve, me t\u00eb cilin ushqehen insekte si afidet dhe insektet me luspa. Teprica e substanc\u00ebs me sheqer q\u00eb nuk p\u00ebrdoret nga k\u00ebto insekte riciklohet nga blet\u00ebt.<\/p>\n<p>Cila \u00ebsht\u00eb alternativa vegane e  mjaltit?<\/p>\n<p>Duke qen\u00eb nj\u00eb produkt me origjin\u00eb shtazore, mjalti nuk \u00ebsht\u00eb vegan sepse prodhohet nga blet\u00ebt,  i cili m\u00eb pas konsumohet nga njer\u00ebzit. Por n\u00eb treg ka disa alternativa vegane t\u00eb mjaltit, t\u00eb cilat mund t\u00eb p\u00ebrdoren si \u00ebmb\u00eblsues ose z\u00ebvend\u00ebsues t\u00eb tij n\u00eb receta dhe preparate t\u00eb ndryshme, si\u00e7 mund t\u00eb p\u00ebrmendet shurupi i panj\u00ebs i prodhuar nga l\u00ebngu i panjave dhe i p\u00ebrdorur n\u00eb Amerik\u00ebn e Veriut p\u00ebr shekuj me radh\u00eb si nj\u00eb \u00ebmb\u00eblsues, ve\u00e7an\u00ebrisht p\u00ebr petullat, \u00ebmb\u00eblsirat, etj.  Ky shurup ka nj\u00eb arom\u00eb intensive, m\u00eb pak t\u00eb \u00ebmb\u00ebl se mjalti, por me nj\u00eb shije m\u00eb t\u00eb fort\u00eb. Shurupi  i panj\u00eb \u00ebsht\u00eb nj\u00eb \u00ebmb\u00eblsues natyral me ngjyr\u00eb karamele, i pasur me mangan, zink, kalcium, hekur dhe vitamina, i cili  ka veti t\u00eb dobishme p\u00ebr trupin ton\u00eb.
